Chia pudding with avocado

Chia pudding with avocado is a delicate, creamy, healthy dessert. It can be prepared for breakfast, for a snack or as a light dinner. The dessert is beautiful, bright, moderately sweet, with healthy bursting balls of chia seeds.

Ripe avocado of any variety is suitable for making pudding. This fruit is very nutritious and rich in useful substances. The taste of avocado is neutral, and this allows you to use it to prepare a variety of dishes, including desserts.

How to choose the right avocado? The fruits ripen after harvesting. Each variety differs in taste, color and density of pulp.


The fruits should be whole, without mechanical damage, dents and signs of spoilage.

If the avocado fruit is ripe, it easily succumbs to light pressure in the palm of your hand. Such a fruit is best eaten immediately or sent to the refrigerator for 1-2 days, no more.

If the fruit is hard and does not yield to light pressure, it will ripen in 4-5 days at room temperature.

The dessert contains no flour, yeast, coloring substances, sugar and other additives. But it contains fats, vitamins, minerals, and thanks to chia seeds, omega-3 fatty acids. Only benefit!

Coconut milk can be replaced with almond or any vegetable milk. If you do not follow a diet, you can use cow's milk.

Chia seeds can be eaten raw and added to various dishes, including those that are amenable to heat treatment. For better assimilation, it is best to grind chia in a coffee grinder, if the dish is consumed immediately, or allow time to swell for about 5-7 hours.

Thanks to lemon juice, the green shade of the dessert is preserved, and plus, the dessert is obtained with a slight citrus sourness. To serve, instead of pistachios, you can take any nuts, coconut chips, any seeds.

Rinse the avocado well with running water and dry it with a paper towel. On a cutting board, cut the fruit in half around the bone. Divide the two halves. Remove the bone.

If the fruit is ripe, the stone is easily removed by hand. You can take a small knife, stick it into the core and extract it from the pulp. Spoon out all the pulp. If the fruit is ripe, the pulp is easily separated from the skin.

The peeled avocado is sent to a deep dish. You can cook dessert immediately in the bowl of a blender. Pour the peeled avocado with lemon juice.

To serve, choose serving bowls, cream bowls or glasses. Distribute the avocado mass over them. I got 3 servings of chia pudding with avocado.

Cover with lids and refrigerate for 5-7 hours. If the chia is crushed in a coffee grinder and mixed with avocado mass, then the dessert can be eaten in 2 hours.
